Randall Restiano

Beverage Director

Randall Restiano is Gramercy Tavern’s beverage director, leading the restaurant’s award-winning wine, beer, spirits, and cocktail program. 

Randall grew up immersed in the hospitality industry, with his formative childhood summers spent working in his family’s restaurant. There, he developed a deep love and appreciation for restaurants, but it wasn’t until a wine course in college that Randall became absorbed in the beverage world.  

Upon graduation, Randall worked at various restaurants in Manhattan and London and studied wine throughout Italy and France, ultimately landing at Eli’s Table and Market, where he spent five impactful years building a celebrated wine program and retail shop. From there, Randall joined the team at Chef’s Table at Brooklyn Fare, before becoming Eataly’s beverage director, where he was charged with enhancing the retail experience, expanding Eataly’s e-commerce business, consulting on beverage program for new locations, and managing 7 restaurants at the flagship location. 

Randall joined Gramercy Tavern in September 2023. In his role, he continues to preserve and amplify the restaurant’s legacy of beverage excellence, championing its seasonal, local, and producer-driven identity.
