Chef de Cuisine
Jonathan Karis grew up in Massachusetts and received his undergraduate degree from Boston University while working at a local, family-run eatery focused on seasonal, northern-Italian cooking. In 2012, Karis moved to the Bay Area, where he honed his culinary skills. For two and half years, he worked at Incanto, an Italian restaurant that specializes in whole-animal butchery and cooking. He then went on to work at Duende, a modern Spanish restaurant in Oakland, CA before returning to the East Coast. Upon moving to New York City in 2015, Karis began working as a line cook alongside Executive Chef Michael Anthony at Union Square Hospitality Group's Gramercy Tavern. He has remained at Gramercy Tavern for several years, eventually being named Chef de Cuisine in 2021.
